Mix Veg Curry Recipe

Mix veg curry is one of the famous Indian dishes. It is a simple and healthy recipe, prepared with a choice of vegetables. It is an easy-to-make-at-home recipe. Let’s see the recipe for this delicious dish.

Ingredients Required:

  • 12 cubes of cottage cheese (cut into cubes)
  • 2 tablespoons of almonds (blanched)
  • 1 potato (chopped)
  • ½ carrot (chopped)
  • ½ cup cauliflower (florets)
  • 4 beans (chopped)
  • ¼ cup peas
  • ¼ cup capsicum
  • 4 teaspoons of oil
  • 1 bay leaf
  • 1 teaspoon cumin seeds
  • 2 teaspoons dried fenugreek leaves
  • 1 green chilli
  • 1 onion (finely chopped)
  • 1 teaspoon ginger garlic paste
  • ¼ teaspoon turmeric powder
  • 1 teaspoon red chilli powder
  • 1 teaspoon coriander powder
  • ½ teaspoon garam masala
  • 1 teaspoon salt
  • ½ cup yoghurt
  • ½ cup water
  • 2 tablespoons of cream
  • 2 tablespoons coriander (finely chopped)
  • ½ cup tomato puree

Preparation:

  • Heat 4 teaspoons of oil in a pan, add bay leaf, cumin seeds, and green chilli and saute well.
  • Add chopped onion and 1 teaspoon of ginger garlic paste and saute.
  • Add all the spices and salt. Saute well.
  • Now add tomato puree and cook well.
  • Add ½ cup whisked yoghurt and stir continuously.
  • Add all the vegetables and mix well
  • Add ½ cup of water and cook for another 10 minutes
  • Turn the flame off, add 2 tablespoons of cream, 1 teaspoon of dried fenugreek leaves, and 2 tablespoons of coriander leaves and mix well.
  • Serve hot with chapati or paratha.

Tip: Roasted vegetables will enhance the flavour of this dish.
