Mix veg curry is one of the famous Indian dishes. It is a simple and healthy recipe, prepared with a choice of vegetables. It is an easy-to-make-at-home recipe. Let’s see the recipe for this delicious dish.
Ingredients Required:
- 12 cubes of cottage cheese (cut into cubes)
- 2 tablespoons of almonds (blanched)
- 1 potato (chopped)
- ½ carrot (chopped)
- ½ cup cauliflower (florets)
- 4 beans (chopped)
- ¼ cup peas
- ¼ cup capsicum
- 4 teaspoons of oil
- 1 bay leaf
- 1 teaspoon cumin seeds
- 2 teaspoons dried fenugreek leaves
- 1 green chilli
- 1 onion (finely chopped)
- 1 teaspoon ginger garlic paste
- ¼ teaspoon turmeric powder
- 1 teaspoon red chilli powder
- 1 teaspoon coriander powder
- ½ teaspoon garam masala
- 1 teaspoon salt
- ½ cup yoghurt
- ½ cup water
- 2 tablespoons of cream
- 2 tablespoons coriander (finely chopped)
- ½ cup tomato puree
Preparation:
- Heat 4 teaspoons of oil in a pan, add bay leaf, cumin seeds, and green chilli and saute well.
- Add chopped onion and 1 teaspoon of ginger garlic paste and saute.
- Add all the spices and salt. Saute well.
- Now add tomato puree and cook well.
- Add ½ cup whisked yoghurt and stir continuously.
- Add all the vegetables and mix well
- Add ½ cup of water and cook for another 10 minutes
- Turn the flame off, add 2 tablespoons of cream, 1 teaspoon of dried fenugreek leaves, and 2 tablespoons of coriander leaves and mix well.
- Serve hot with chapati or paratha.
Tip: Roasted vegetables will enhance the flavour of this dish.
